IVM is a method of producing meat by growing animal cells in a lab, using stem cells and foetal calf serum (the nutrient rich blood derived from calf foetuses). This produces thin strips of muscle cells which can then be processed into meat products such as burgers and sausages. Predictions vary on when this technology could be widely available to consumers, with some suggesting in the next five years and others saying this technology is still decades away. Currently the technology is still in development, largely supported by funding from academic institutions or groups such as PETA.
